i was taught (incorrectly) that i needn't double declutch when heel'n'toeing
first time i had circuit instruction the instructor kept peering over to see what my left foot (wasn't) doing as i blipped the throttle while on the brakes

it's not just the engine, but the entire drivetrain needs to be synchronised
try dropping down to first gear without doing it!

it is one of those 'masonic handshake' driving techniques that will always give you an advantage over someone not doing it
it just keeps the car smooth whilst braking, and then helps you make a smooth, clean transition to full throttle, without the car dancing about, and means the engine is on cam ready to pull you through the corner

in a nutshell, it makes you quicker
that's why in-car footage of rally drivers often shows their feet dancing across all three pedals
