I don't exactly dine with Ramsey personally but even the 'good' restaurants I go to, I've never had to cut any fat off a fillet. In fact, I can't recall a time recently where I"ve had a fillet and left any of it on the plate due to grissle or fat.
Not saying the steaks aren't better over there but not grumbling at some of the ones I've had over here...
