Yes, the Castrol Syntrax Limited Slip 75w-140 is the correct diff oil. It should really be the Pentosin FFL Racing rather than FFL4 in the gearbox.

Not if the oil is only getting to 100C. A 40 is 12.5-16.3cSt at 100C, a 60 is 21.9-26.1cSt so a 60 can be twice as thick as a 40 at 100C and there is no benefit to that.

You can put a 75w-140 in, but it is not ideal, it's likely to make gear changes harder and put more strain on the box. A mixture of the two is more sensible.
