Avoid Everyman Racing.
Cars are old/worn badly and they don't let you put your foot down properly.

That's because the instructors get fined £10 by the owner if the customers hit a cone on the circuit and £25 for a spin!
Much better company is Supercar Drive Days, have a look at their reviews on Trip Advisor, its's Supercar Drive Days Derby.
An alternative would be to use your/her roadcar on a trackday and hire an instructor. Javelin trackdays run all over the country and the days are very competitively priced.

Ive done a couple of Palmersport days and they've been excellent.

Can't fault it tbh, brilliant instructors who push you as far as you could possibly go, very professional, slick day.

A bit of a corporate feel to it over a personal one, but that's to be expected given the price.
