1) in the boot, on the left-ish side (around "sky" in "skyline), there are two relays. The left one makes a loud clicking sound every ten seconds or so. What are those two relays?

2) under the hood, near the intakes and right up behind the radiator, is a black pot, kinda looks like the power steering reservoir but bigger. Out of the top are two hoses, both of which plug into the engine head. Says something like "nissan fuel" and a relay diagram on the pot. I found one of the hoses disconnected, and stuck it back on - don't think it was meant to vent to atmosphere, whatever it is. What is that thing?

The clicking noise in the boot is most likely the 4WD pump relay. It sounds like the accumulator doesn't hole pressure very well.

The thing under the bonnet is the charcoal canister for the fuel evaporasion system.

I think the shop may have neglected to bleed the ATTESA system when they put the car together - that might get rid of the click.

Does the charcoal canister require maintenance in any way?

The canister doesn't require any maintainance to the best of my knowledge.

You might be right about the bleeding, it's worth a try..
