My oil pressure reading has been acting up. Some days it reads nothing some days fine other days somewhere in between. The engine sounds fine and has been through a few oil changes with no problem in the oil.

How likely is it just a bad oil pressure switch and not the pump?

If the switch doesnt fix the problem Im going to assume its the pump and have it replaced since im going to take it in for a timing belt service anyways. Im shooting for a 500 to 600 hp mark eventually but the car is mostly a weekend driver and may only really see a track once a year.

Would a regular oil pump suffice or should I shoot for Jun, Tomei, etc etc?

Take it to a specialist so they can check oil pressure with a pressure gauge, it should be the sender or the gauge itself that may be playing up!

Going for a higher flow pump Jun, Tomei etc would usually need to be matched with a high capacity sump. N1 and Nismo would be fine for your power levels.

Faulty switch is a know issue, try and replace that first and see what happens.
