About 6 months ago I bought my first r32gtr. I was sold the car with apparently steel internals on the standard turbos. I have changed these now for some different turbos and was wondering if there is anyway of checking if they do have steel internals or were they telling me a load of s#%t

The shape of the drive on the turbine end is different between ceramic and steel. IIRC, triangular is steel.

"Steel" wheels would mean the exhaust wheels. On most rebuilds the std aluminium compressor wheel is reused.
The exhaust wheels shouldn't be made from steel as such, as they would melt.
They are most likely, or should be made from inconel witch unfortunately isn't
Magnetic.
The only way to tell would be to compare the nut bit of the exhaust wheel against standard ones. On my steel hybrids it is hexagonal. On std ceramics I think they are bi-hexagonal.
